With 52 reported cases of hepatitis A on Oahu, restaurants are taking steps to contain the viral infection. Some restaurants are requiring employees to wear gloves and to wash hands more frequently. Food consultant Tom Fridge says “the last thing restaurants want is to have this virus spread from that restaurant.” Fridge also urges food workers to get a hepatitis A vaccination. Fridge adds that dirty hands, especially the area under fingernails, should be washed thoroughly for at least 20 seconds with warm water. Hepatitis A is a disease spread by poor personal hygiene.
